Vegan pancake recipe with jams from Pivnița Bunicii

Who doesn't love pancakes? They're our little lifesavers when we want something quick and sweet, our guilty pleasure we enjoy quietly (or noisily, depending on our appetite), and the ultimate reminder of childhood. Most of all, they're that ”go-to-recipe” we all know by heart and can always rely on.


But what do you do during fasting periods or when you don't have milk and eggs in the fridge? That's where we come in with our special vegan pancake recipe! No eggs, no milk - just mineral water and a few simple tricks.

Let's make these vegan pancakes together. Easy, quick, and - most importantly - hassle-free!


Ingredients

• 250 g flour

• 500 ml sparkling water

• 2 tablespoons sugar

• 2-3 tablespoons oil

• A pinch of salt

• Vanilla extract, lemon or orange zest

• Jam from Pivnița Bunicii


This recipe makes about 10 vegan pancakes.


How to prepare them

In a large bowl (we don't want flour flying everywhere), mix the flour, sugar and salt. Slowly pour in the sparkling water while whisking constantly. This is your moment to feel like a top chef - make sure there are no lumps! Add the oil and your favorite flavorings (we love vanilla and orange zest). The batter should be smooth and have the consistency of thin cream - not as runny as water.


Heat a non-stick pan well (so the pancakes don't stick and ruin the fun). Lightly grease it with a small amount of oil using a paper towel or brush. Pour a small ladle of batter into the pan and swirl it around to spread evenly. Once the edges start lifting slightly, it's time to flip.


As you finish cooking, place each pancake on a plate and cover it with a clean towel. This keeps them soft and ready to fill with your favorite spreads. We love them with plum jam, rhubarb jam, strawberry jam or raspberry jam.


And that's it! In less than an hour, you'll have a stack of vegan pancakes so delicious, you won't even miss the milk or eggs. They're soft, thin, and bursting with flavor - you'll keep coming back for more!
